Recipe: Kuih Lapis II

Ingredients:

15 egg yolks
5 egg white
300g butter
120g icing sugar
110g self raising flour
100g sugar
1 tsp mixed spices
1 tbsp brandy

Method:

1. Sift self raising flour.

2. Cream icing sugar with butter till light and fluffy. Reserve for use.

3. Beat sugar with egg white till stiff.

4. Add one yolk at a time and beat till fluffy.

5. Pour creamed butter into (3). Fold in self raising flour to mix well.
Add mixed spices and brandy. Mix well.

6. Pour 1/2 cup of mixture into a square tin. Spread evenly.
The temperature of upper and lower heating elements in the oven to be kept at
200 deg C. Bake till golden brown. Remove.

7. Pour another 1/2 cup of mixture over it.
Bake again till golden brown. Remove.

8. Switch off the lower heating element. Bake with moderate heat from above.
Repeat the process.

9. Switch on both heating elements on for the last layer.
Bake at 180 deg C for 12min. Remove to cool.
