Recipe: Chocolate Swirl Cheesecake

Ingredients: ------------------ Cream Cheese Mixture 250g cream cheese (soften at room temperature) 60g castor sugar 1 egg Chocolate Mixture ----------------------- 180g butter 150g caster sugar 3 eggs 3 tablespoon cocoa powder 120g self-raising flour 1 tablespoon baking powder Method: ----------- 1. Preheat oven at 150°C. 2. Grease and line a 20cm round cake pan. 3. Cream Cheese Mixture - beat cream cheese with sugar until light and fluffy. Add in the egg gradually and beat until well incorporated. Set mixture aside. 4. Chocolate Mixture - Beat butter and sugar until light and fluffy. Beat in eggs, one at a time until well incorporated into mixture. Sieve all the dried ingredients together. Fold into the egg mixture. 5. Pour half of the chocolate mixture into the cake pan. 6. Pour all the cream cheese mixture and then the remaining chocolate mixture. Gently spread the chocolate mixture to cover all the cream cheese mixture. 7. Bake for 45-5...

Ingredients: ---------------- 60g dark chocolate, melted 60g white chocolate, melted 250g cream cheese 150g caster sugar 2 eggs 100g butter 60g top flour Method: ----------- 1. Beat cream cheese with 50g sugar until light and fluffy. 2. Cream butter with remaining 100g sugar until light and fluffly, add in the eggs and cream well. Crust: -------- Oreo Cookies 140g, without the cream Butter, melted 70g Finely ground the biscuit. Pour warm butter over biscuit. Toss well to coat mixture with butter. Press firmly into an even layer on the bottom of pan. Freeze for at least half an hour. Filling: ---------- 500g cream cheese 120g castor sugar 2 1/2 eggs 150ml whipping cream 1/2 tsp salt 1 3/4 cup mashed yam, peeled, steamed, pureed few drops of purple colour (optional) Beat cream cheese and sugar until creamy. Makes 2 * 20cm round pan Ingredients: ----------------- 160g cream cheese 25g butter 120ml milk 40g flour 30g corn flour 4 eggs, separated 100g caster sugar pinch of salt Method: ------------- Grease and line the bottom of 2 * 20cm round pans and wrap the outside of the pans with foil. Place cream cheese, butter and milk in a double boiler and stir until melted and thick and set aside. Add in flour and corn flour to the above mixture, followed by egg yolks and mix well. Whisk egg whites until foamy then add in sugar gradually then whisk till soft peaks form. Add in 1/3 egg whites into the yolk flour mixture, followed by the rest of the whites. Fold in gently. Pour mixture into pans and bake in a water bath in a preheated oven of 160 degC for 40 to 45 min until the top is golden brown and a skewer inserted into the cake centre comes out clean. Recipe: No Bake Oreo Cheesecake

Ingredients: --------------- Base:- --------- 110g digestive biscuits 40g melted butter Filling:- ------------ 250g cream cheese room temperature 45ml milk 50g icing sugar 1 tbsp vanilla essence 8 oreo cookies (coarsely chopped) 4 oreo cookies (finely chopped) 250ml whipping cream 1 tbsp gelatine powder 10ml lemon juice 3 tbsp boiling water Method: ---------- Mix biscuit crumbs and melted butter together and press firmly onto the base of a tin. Chill for 30min. Beat whipping cream until it is stiff. Double boil the gelatine, lemon juice and hot water until dissolved. Blend in gelatine to the whipped cream. Pour half of the cheese mixture to the base, and chill for another 15 min. Stir in finely chopped cookies into the other half of the mixture and mix well. Sprinkle coarsely chopped cookies on the top of the first half of the cheese mixture. Pour in the other half of the cheese mixture. Chill for 3 to 4 hrs before serving.

Ingredients: --------------- 5 sliced cheese 200ml fresh milk 70g butter 70g cake flour 70g sugar 4 eggs, separated 1 tsp vanilla essence Method: ----------- 1. Tear cheese slices into small pieces and add to the milk in a small pot 2. Heat milk and cheese on low heat till cheese melts, stir mixture to prevent lumps 3. Add butter, let it melt and stir till well blended 4. Beat egg white till frothy and slowly add sugar and beat till glossy and stiff, leave aside 5. In another clean bowl, beat the yolks till creamy and add it to the milk mixture with the vanilla essence 6. Slowly stir in flour and gently mix till smooth 7. Then add 1/3 of the meringue and gently fold into the milk+egg+flour mixture, once blended, add the the remaining 2/3 and gently fold till you don't see any streaks 8. For the above, I've tweaked the recipe a bit by changing to Oreo biscuits 1 packet - 12 to 15 biscuits, about 120g (without the cream) Unsalted Butter - 40g Cream cheese - 250g Whipped cream - 200g Icing sugar - add to taste Gelatine powder - 2 tbsp Green tea powder - 3 1/2 tbsp dissolved with water (quite a lot as I wanted to cover the cheesy taste) Ingredients: ============= Crust: -------- Butter crackers 40g Unsalted butter 15g Filling: ---------- Cream Cheese 200g Milk 100g Castor sugar 40g Gelatine sheet 2pcs Green tea powder 2 teaspoon Method: --------- Melt the butter in room temperature.
